- Kagawa University is aiming at "Based in the community and Extends globally with the community".There are already several functioning projects existing at Kagawa University. Firstly, "Team Kagawa," a project aiming at overcoming diabetes mellitus and obesity in Kagawa Prefecture and has been running since 2009. Secondary, the project of "Rare Sugars" deals with the production and functions of rare sugars. Rare sugars are monosaccharides rarely existing in nature, have been used to overcome lifestyle-related diseases in Kagawa under the academia-industry-government collaboration. Thirdly, the telemedicine project called K-MIX (Kagawa Medical Internet eXchange) has also been developed in Kagawa to establish the information and communication technology (ICT)-based critical paths which benefits disease control of diabetes mellitus, cerebrovascular diseases, and so on. The proposed project aims to perform various research to adapt the Team Kagawa system based on ICT and develop functional sweetener and healthy foods using rare sugars and medicinal plants under the collaboration with Chiang Mai University and Universiti Brunei Darussalam. With an in-depth study on the functionality and safety of processed foods and their ingredients from domestic and international material, this project promotes the standardization of nutraceutical factors and food safety. Significantly, to develop new technology for the value-added processed food and food ingredients with safety under the cooperation with overseas research institutions, we will study not only the toxicity assessment of microorganisms, but also physical function such as emulsification, encapsulation, texture improvement, and various physiological functions such as antibacterial, anti-allergic, and nutritional properties of food material and processed foods. We are proud of new materials, rare sugars bearing various physiological functions. It has been developed at Kagawa University and applied to creating processed foods so far by the cooperation with foreign universities and students. From around 1955, Kagawa University, in particular, Faculty of Agriculture, has conducted academic exchanges with universities and institutes (Chiang Mai University, Thailand, Bogor Agricultural University, Indonesia, etc.) in Southeast Asian countries and accepted many international students. Taking advantage of the network, a search of substances having biological activities such as an antioxidant activity from various plants and trees (Jatropha, etc.) and fast-growing afforested trees (falcata, etc.) in tropical and subtropical Southeast Asia is performed. Structural analysis of the enzyme or receptor that interacts with the active substances, structure-activity relationship studies with synthetic derivatives of the active substance is carried out. Research and development of pharmaceuticals and agrochemicals, such as novel anti-cancer agents and antimicrobial agents, occur. Also, to achieve a high degree of utilization by the liquefaction and plasticization of the woody biomass such as bark and waste wood from the fast-growing trees. These studies are carried out by the Center for Advanced Biochemistry and Chemical Biology, the Faculty of Agriculture in conjunction with the Faculties of Medicine and Education, a research institute of Kagawa Prefecture, and a company in Kagawa Prefecture, and its affiliate in Indonesia.

Furthermore, graduates will provide lifelong learning to people and health workers in their communities to contribute to the improvement of health care in their region. Educational goal: The development of highly educated personnel with a developed sense of ethics and broad knowledge can act according to the dignity of life and human rights based on their deep sense of humanity. Development of health care personnel with professional knowledge and practical abilities as well as comprehensive judgment skills. Development of health care personnel with scientific thinking, based on creativity and curiosity, striving for livelong improvement of their abilities and can adapt to advanced medical care technologies and changes in the social environment. Development of health care personnel who contribute to society by attaching great importance to health care and welfare and cooperating with other professionals. Development of health care personnel who understand and respond to demands characteristic of the region and its various healthcare and welfare needs. Development of personnel able to solve healthcare and welfare problems with an international perspective. We aim to foster a high sense of humanity, based on respect for the dignity of life in our candidates and teach them professional knowledge and skills in order to meet social needs. We want to develop specialized nurses with a deep understanding of their healthcare and welfare system's role. We aim to teach our students the ability to warm-heartedly share human joy, pain, and suffering based on respect for the dignity of life. Furthermore, we want to foster a rich sense of ethics and humanity to act following human rights. To solve health-related problems, students will learn to develop intellectual power, the ability to judge, and the ability to adapt to certain situations by studying to acquire the necessary knowledge and skills. We aim to develop nursing practice abilities based on the understanding of humans as individuals, parts of groups, families, or communities. We want to develop an understanding of nursing as part of the healthcare and welfare system and foster students' ability to contribute to local and international communities. We want students to develop the ability to improve themselves and become specialists in practice, education, or research.

- Aya Kagawa and her husband Shozo had a purpose - to rid the country of illness by applying healthy eating practices. As physicians at the University of Tokyo, Aya and Shozo were involved in research into the disease beriberi. While researching cooking rice methods, Aya came up with the idea of using whole rice, rice with the embryo still attached. This is what Aya and Shozo strove for - the promotion of good health through nutrition. This was the founding idea behind today's Kagawa Education Institute of Nutrition. This dual approach to nutrition enables our students to examine their chosen fields of study from both a theoretical and a practical perspective. Our graduates are armed with unique knowledge and skills that enable them to take leadership positions in health policymaking, cultivate new food cultures, and invigorate creative food industries. They can contribute in all areas relating to food, health, and nutrition and provide valuable services to their communities. In its efforts towards excellence in the fields of nutrition, food, and health, Kagawa maintains close links with various organizations within Japan in these fields and educational institutions and organizations in other countries. As part of its ongoing efforts in education aimed at improvements in health through nutrition, Kagawa pursues the following in addition to its regular courses. Kagawa offers lectures aimed at local communities and the general public, lectures on diet and nutrition aimed primarily at schools, and nutritional guidance to those interested in improving their daily diet. Two educational programs authorized by the Ministry of Education, Culture, Sports, Science, and Technology are offered: correspondence courses on preparing food for a well-balanced diet contributing to good health and cooking proficiency tests to assess cooking skills levels. KNU publishes a monthly magazine Eiyo to Ryori (Nutrition and Cookery), and a range of books and distributes articles on staff health management for inclusion in corporate in-house magazines. Taiyo to Ryori celebrated its 70th anniversary in 2005. The Kagawa Education Institute of Nutrition is dedicated to developing an international understanding of food and nutrition sciences and fostering an international awareness in both students and teachers. To facilitate this objective, the Institute provides students with a range of opportunities to experience foreign cultures first-hand. Short study tours abroad focus on food and nutrition as well as language learning. Also, members of the teaching staff are encouraged to participate in overseas visiting programs. The establishment of an academic office in Perth, Western Australia, and links with Curtin University, the University of Western Australia, and Edith Cowan University provide teachers with many opportunities to share their knowledge and learn from others in the profession.
