Four Seasons Hotel London at Tower Bridge is seeking a passionate and knowledgeable Sommelier to join the team at Coopers Cut.

About Coopers Cut

Coopers Cut is a contemporary steakhouse offering a contemporary dining experience centred on premium cuts, seasonal produce and a curated wine list. The 60-seat restaurant, complemented by a 12-seat private dining room, delivers an intimate yet refined atmosphere for fire-led dining, combining precision cooking with quality ingredients and a modern London sensibility.

The role

As Sommelier, you will be the ambassador of the restaurant's wine programme, guiding guests through the wine list and delivering personalised recommendations that enhance their dining experience.

Working closely with the Restaurant Management and Culinary teams, you will help drive beverage sales, ensure exceptional wine service, and contribute to the continued development of the restaurant's wine offering.

What you will do

• Provide expert wine recommendations and food pairing guidance to guests
• Deliver professional and engaging wine service throughout the guest experience
• Maintain comprehensive knowledge of the wine list, beverage programme, and seasonal menu offerings
• Support wine sales and contribute to achieving beverage revenue targets
• Assist with wine stock management, inventory control, and cellar organisation
• Ensure all wine service equipment is maintained to the highest standards
• Support team training and share wine knowledge with colleagues
• Stay informed on industry trends, emerging regions, and new producers
• Build genuine relationships with guests and create memorable dining experiences

What we are looking for

• Previous experience as a Sommelier within a luxury hotel, fine dining restaurant, or premium hospitality environment
• WSET Level 3 or equivalent qualification preferred
• Strong knowledge of global wine regions, grape varieties, and food pairings
• Passion for wine, hospitality, and guest engagement
• Excellent communication and interpersonal skills
• Strong organisational skills and attention to detail
• Commercial awareness and ability to drive beverage sales
• Positive attitude and team focused approach
• Good spoken and written English
• Right to Work in the UK

What to expect

• Full time position based on a 40 hour working week
• Five shifts per week across a rotating schedule
• Restaurant operation across lunch and dinner service
• Flexibility required across evenings, weekends, and public holidays
