The Four Seasons Resort Hualalai is looking for a Kipuka Cook 1 who shares a passion for excellence and who infuses enthusiasm into everything they do. Our Kipuka Cook 1’s have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required.
WHAT YOU’LL DO
- Prepare breakfast, lunch, and dinner items in Staff Cafeteria in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
- Maintain a high level of integrity with the staff. Lead by example. Set the standard by which all others should follow.
- Assist with Scheduling to ensure proper coverage while meeting labor and quality standards.
- Assist with daily line and have the ability to conduct an engaging daily line ups in Chefs absence. Take in active role in all meetings.
- Responsible for training new colleagues and assist with cross training initiatives.
- Responsible for Safety of the staff and guests, allergies, equipment training, time and temperature control, equipment temperatures.
- Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill, etc.
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
- Controlling food waste, over producing/production and /or spoilages.
- Ensure proper rotation, label and dating of all products on a daily basis by all staff.
- Work with Banquet Chef & Food Buyer to manage ordering for all Staff Dining Meals
- Ensure Quality of Food in Staff dining is always maintained at a high level.
- Work with the Banquet chef to ensure that we are meeting corporate guidelines for staff dining meals, from variety, to experience, to health requirements.
- Check satisfaction of diners in Kipuka through daily table touches
- Ensure that the staff dining room is well maintained, and the food buffet is clean and stocked at all times.
- Assist in training all staff dining employees.
- Ensure that proper hygiene measures are being followed in both the banquet kitchen but also the front of house staff dining and service are

WHAT TO BRING
- Successful candidate must possess legal work authorization in United States
- Minimum two years culinary or related work experience. Advanced culinary knowledge is expected for this position. Working knowledge is generally learned on-the-job.
- Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill. Proficient knife skills and ability to multi-task.
- Weekend & Holiday Availability required.
