Are you ready to take the next big step in your culinary career? Four Seasons Hotel Toronto is looking for a Pastry Sous Chef who shares our passion for pastry and baking and is willing to learn from and contribute to our culinary team. Our Pastry Sous Chef will be a key leader of a dynamic culinary team providing memorable culinary experiences to our guests. This position reports to the Pastry Chef.

About the role:

The Pastry Sous Chef will support the Pastry Chef in the day-to-day operation of the Pastry Kitchen.  Including training, quality controls inspection, food safety assurance and supervising all Kitchen personal to ensure the highest standards of food quality.

What you will do:

The Pastry Sous Chef will coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen’s bake/pastry shop through effective management and leadership to ensure that established cultural and core standards are met. They will assist in the planning and development of recipes and ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration. They will also control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

The Pastry Sous Chef will ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations comply as well as the cleanliness and organization of the kitchen. They will maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.  They will also communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments. They will also work harmoniously and professionally with co-workers and supervisors.

Preferred Qualifications and Skills:

  • Excellent knowledge of and passion for local, organic, sustainable ingredients
  • 4+ years of experience working in a kitchen management role in a fast-paced and luxury environment
  • Previous experience working with banquet pastry operations is an asset
  • Culinary education with a specialization in pastry arts is an asset
  • Skill at identifying and cultivating talent and passion within the team
  • Strong communication skills in English, additional languages are an asset
  • Strong computer skills and ability to use Microsoft Office Outlook, Word, and Excel 
  • Food Handler’s Certification
