At Four Seasons Residence Club Aviara, the Stewarding Lead is responsible for overseeing the Stewarding team to ensure a clean, safe, and efficient environment. The Stewarding Supervisor manages the cleaning and maintenance of kitchen equipment and ensures compliance with health and safety regulations.
What you will do
• Supervise and coordinate the activities of the stewarding team to ensure cleanliness and
organization in all kitchen and dining areas.
• Train, mentor, and provide guidance to stewarding staff on proper sanitation and cleaning
procedures.
• Clean, sanitize and safely properly operate the dishwashing machine, including dissembling,
and assembling for cleaning, loading, and unloading of dishes and flatware and changing the
water when/adding chemicals when necessary or when instructed to do so.
• Scrape and stack all dishes properly and rack all glassware.
• Wipe down, sweep/mop and tidy the back of the house kitchen and dish washing stations.
• Work closely with the grill service staff to assist with carrying trays, hot boxes, pushing of
towel carts, carrying of towels, lifting boxes from purchasing and put items away in
designated areas.
• Separate all flatware.
• Store all china, glassware, and sliver in their designated areas.
• Clean and sanitize kitchen walls, floors, drains, reach-in coolers, walk-in refrigerators, and
other locations.
• Handle and use all cleaning materials/chemicals safely.
• Properly and safely handle sharp objects while cleaning such as kitchen knives & meat slicer.
Monitor inventory of cleaning supplies and equipment, and place orders as needed.
• Perform other tasks or projects as assigned by management.
• Train, coach and give constructive feedback to Stewarding staff.
• Create schedules based on hotel occupancy and work within operating budget.
• Maintain inventory of plate ware, glassware, utensils, and kitchen equipment, maintain a
daily break log and assist in cost control measures related to stewarding operations.
• Lead and train safety protocols with team members of stewarding
• Train and maintain Health Department standards and protocols.
• Create and delegate daily cleaning schedules.
• Implement and enforce hotel policies and procedures within the stewarding department.
What you bring
• Previous supervisory experience preferred
• Minimum one-year related work experience
• The ability to lift up to 40lbs
• Reading, writing and oral proficiency in the English language
• San Diego County Food Handlers (not required upon hire)
• Excellent communication and interpersonal abilities
• Knowledge of sanitation and safety regulations in a kitchen environment
• Ability to multitask and prioritize tasks effectively
• Problem-solving skills and attention to detail
• Flexibility to work various shifts as needed
